Why Highland beef?

We chose Highlands for more than their looks. They are hardy cattle that make good use of forage and have a reputation for flavorful beef.

Their thick double coat helps keep them warm without relying as heavily on a thick layer of fat beneath the skin. That outer fat is different from marbling—the small flecks of fat within the meat that contribute to flavor and juiciness. Highlands can develop marbling, and how they are raised and finished makes a difference.

Grain-finished or forage-finished?

Adding grain, including corn, during finishing can help develop more marbling. A forage-only finish keeps the diet based on grass and hay and often produces leaner beef with a different flavor. Both approaches can produce good beef; the choice comes down to what you enjoy.

Studies generally find higher omega-3 levels in forage-finished beef than in grain-finished beef. The amount varies with the animal’s diet, so this is a general comparison—not a measured claim about our beef. Feeding and finishing matter more to that comparison than the Highland name alone.

How we feed our cattle

Our cattle are raised on a predominantly hay-based diet without added growth hormones. As they approach finishing, we can supplement with grain, including corn, to encourage the marbling that contributes to flavor and tenderness.

For customers who prefer a forage-only finish, ask about availability and timing. We’ll explain the feeding approach and help you choose an option that fits your preferences.
